Garlic Chicken with Cauliflower Rice

This healthy meal is both low carb and super tasty. It’s perfect for a healthy quick meal to serve to a family of fussy eaters! It’s a meal everyone will enjoy!

Ingredients
- 2 boneless/skinless chicken breasts
- 1/2 cup fresh Parmesan
- Salt and fresh cracked black pepper
- 2 large cloves garlic
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- 4 tablespoons unsalted butter
- 1 head cauliflower, riced
- 1/2 cup white onion
- 2 large cloves garlic
- 2 tablespoons vegetable stock
- Juice of one lemon
- Red chilli pepper flakes
- 1/4 cup fresh parsley
Method
Chicken
1. Combine grated Parmesan cheese, grated garlic, paprika, and Italian seasoning in a small bowl. Then cut your two chicken breasts horizontally so you have 4 pieces of chicken. Season the chicken breasts with the seasoning just made and add salt and pepper to taste.
2. Melt 2 tablespoons of butter over medium-high heat in large wok like pan. Cook chicken breasts flipping every 4 minutes until golden.
Cauliflower Rice
1. To rice your cauliflower cut into quarters then either grate on a tradition cheese grater or blitz in a food processor.
2. In the pan with melted butter add grated garlic and finely chopped onion for 1 minute until soft and lightly brown.
3. Add the riced cauliflower to the pan and stir to mix everything together add a little bit more melted butter and stirring regularly for 1-2 minute.
4. Stir in the 2 tablespoons vegetable stock, half the chopped parsley and lemon zest. Cook the cauliflower rice for one minute to reduce juices then add the lemon juice and add leftover Parmesan cheese.
5. Do a taste test and add any other seasonings you require to meet your taste expectations. Add chicken breasts over cauliflower rice and serve red chilli pepper flakes and more Parmesan.
