DELICIOUS CAULIFLOWER CHEESE PIE (VEGAN)

A heart dish perfect for a cold day is a perfect blend. This meal can be made to suit vegans and vegetarians by swapping a few ingredients.

INGREDIENTS
· 2 cups of cooked cauliflower
· ½ chopped onion
· 1 cup of baby leaf spinach
· 2 crushed garlic clove
· ½ cup of milk (of your preference, oat for vegan)
· ½ cup of cream (of your preference, soy for vegan)
· ½ cup of grated mature cheddar (Vegan cheddar)
· 3 tbsp yeast
· 1 tsp of flour or cornflower
· Vegan Pastry
METHOD
1. Add a small amount of oil to a pan and brown the onion (diced) and garlic (crushed).
2. Pour in the milk and cream and bring to a simmer.
3. Add the cheese to mixture and stir until it has melted. Add salt, pepper, yeast and flour. Stir for 2-5 minutes until thick and combined.
4. Add the cooked cauliflower and uncooked spinach and mix.
5. In a baking tin line out vegan pastry and then pour your pie mix into the dish sprinkle with more grated cheese.
6. Bake for 20-25 minutes.
7. SERVE!!
Note: You can also make several smaller pies rather than one large pie!
