For all you chocolate lovers out there, this is just for you! Its a perfectly smooth and soft cookie that leave the taste bubs tingling!
Ingredients:
2 large eggs
1 cup unsalted butter
1 tbsp vanilla extract
12/3 cups all-purpose flour
140 g chocolate
1 tsp baking soda
3/4 cup dark brown sugar
1/4 cup granulated sugar
1/3 cup cocoa powder
1 1/2 tsp kosher salt
Method:
1. Preheat oven to 180° fan forced. Coarsely chop 110g of chocolate (you want them to be a bit chunky). Chop remaining 30g of chocolate slightly bigger, keep separate these will go on top of cookies.
2. Cut 1 cup of unsalted butter into large pieces and melt in a glass bowl over a pan of boiling water or in microwave. Immediately scrape into a large bowl and let cool slightly, about 5 minutes.
3. Add 3/4 cup brown sugar, 1/4 cup granulated sugar and a pinch of salt to melted butter, mix thoroughly to combine. Add 1 egg and whisk then add the second egg along with 1 Tbsp of vanilla.
4. Whisk 1 2/3 cups of all-purpose flour and 1 tsp of baking soda in a medium bowl to combine. Mix 1/3 cup cocoa powder, then whisk again to combine.
5. Mix both dry and wet mixtures together and then add the 110g of chocolate. Let dough rest at room temperature for 30 minutes.
6. Line a baking tray with baking paper and mould dough into ping-pong sized balls. Lightly press a chunk or two of remaining chocolate on top of each dough ball.
7. Bake cookies, until edges are just set but centres are still soft, 10–15 minutes. Remove from oven and let cool for 10 minutes, then transfer to a wire rack and let cool completely.
